Paul Henry focused mainly on the west of Ireland (where the land was at its worst) and created some evocative scenes, such as that in the link below. Not all famine-related, but some can be interpreted that way. Otherwise, maybe some deserted houses/cottages (bearing in mind that this was in the mid-1800s). Or people toiling at the land, like Millet's The Gleaners, only reinterpret and adapt it to suit your needs. Try googling 'famine villages' and other similar words for more inspiration.
